Instant Pot Pulled Pork Sliders with Blue Cheese & Bacon Coleslaw

Pulled Pork:

2 lb Boneless Pork Loin

1 cup Sticky Fingers Carolina Classic Barbecue Sauce (a must!) 

1 cup Reduced Sodium Chicken Broth

Salt & pepper to season 

1 TBS olive oil

Blue Cheese Cole Slaw:

1 10 oz bag of Angel Hair Cole Slaw 

3/4 cup of Dukes Mayonnaise (Gotta have Dukes) 

1 oz Real Bacon pieces

4 oz Blue Cheese Crumbles

1 TBS Organic honey 

2 TBS Red wine vinegar 

Directions:

  1. Heat 1 TBS olive oil over sauté setting on your Instant Pot 
  2. Cut pork loin in 4 sections 
  3. Season with salt and pepper on both sides 
  4. Sear the pork on all sides 
  5. Turn off sauté setting and pour 1 cup of chicken broth over the meat scraping up all bits left on the bottom of the pan. 
  6. Pour 1/4 cup of the barbecue sauce over each of the sections of pork. 
  7. Seal your instant pot and heat on high for 20 minutes. 
  8. Quick release after 20 minute timer.
  9. Take 2 of the sections at a time and use your kitchen aid mixer on low with the paddle attachment to pull the meat apart. This is a quick and easy way to shred your meat. 
  10. Stir in remaining barbecue sauce and stir well. 

Blue Cheese & Bacon Cole Slaw 

Directions:

  1. In a large bowl empty Cole Slaw mix into bowl
  2. Pour in 1/2 of small bag of bacon pieces and 1/2 the tub of crumbled blue cheese
  3. Stir in Dukes mayonnaise, red wine vinegar and honey 
  4. Mix until well incorporated. 
  5. Salt & pepper to taste. 
  6. Refrigerate for 20 min before serving. 

To serve:

Heat up mini brioche buns in the toaster oven, serve up the pulled pork on the bun and top with coleslaw. I served ours with sweet potato puffs! So yummy!
