280 Calorie Breakfast Quesadilla

I went to bed thinking about what I was going to make for breakfast the next morning. Anyone else do that? I have modified my original breakfast quesadilla to a 280 Calorie Breakfast Quesadilla. Now you can eat what you want without feeling deprived of your favorite breakfast.

Servings: 2

You can of course modify this to be a single serving. I was just making it for Chris and I.

Ingredients:

2 Ole Xtreme Wellness Tortilla Wraps (50 cal each)

3 Organic Brown Eggs Beaten (70 cal per egg or 105 per serving)

1/8 cup Fiesta Blend Shredded Cheese (55 cal)

4 slices Turkey Bacon (Oscar Meyer) (70 cal)

280 Total Calories

Directions:

Cook bacon on griddle.

Beat 3 eggs and cook on medium high heat on an 8-9 inch greased pan.

After bacon is finished cooking, place on a paper towel.

Add 2 tortillas on the already greased griddle and sprinkle with cheese. Don’t go heavy handed here. I just put enough to lightly cover the bottom half of the tortilla.

Once egg is finished cooking split in half and add to the top of the melted cheese.

Top with 2 pieces of turkey bacon.

Fold the tortilla over and brown on both sides.

Enjoy!
