Southwest Beef Bowl – Whole 30
Hey y’all! It’s been awhile since I’ve shared a recipe on here. I also got a lot of questions about it when I shared it on my Instagram stories. While we were on Whole 30 I was trying to come up with some new EASY and FAST recipes for dinner. I’m the kind of person who could eat Mexican food every day if you let me. Just give me all the avocados please! This Southwest Beef Bowl is super easy while also being Whole 30 compliant. You could certainly make it without being Whole 30 if you wanted. There is no dairy or processed sugar in this meal. Whenever we would go to Moe’s we would get a bowl, so this is my spin on a Moe’s bowl while being Whole 30 compliant. I hope you’ll enjoy!
Ingredients:
1 bag frozen riced cauliflower
1 diced red pepper
1/2 cup chopped yellow onion
1 lb ground beef
1 cup sliced grape tomatoes
2 chopped avocados
1 small can of black olives
Old El Paso salsa for topping
Salt and Pepper
1/4 cup Taco Seasoning (Whole 30 compliant – ingredients below)
Taco Seasoning Ingredients:
1/2 teaspoon chili powder
1/2 teaspoon garlic powder
1/4 teaspoon smoke paprika
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon onion powder
1/4 teaspoon sea salt
1/4 teaspoon ground pepper
Directions:
- Brown ground beef in saute pan
- Drain beef and then add 1/4 cup of the homemade taco seasoning mix with 2/3 cup of water. Let simmer for 5 minutes.
- Prepare/chop vegetables while beef is simmering.
- Move beef to a separate bowl and wipe out pan with a paper towel.
- Add a drizzle of olive oil, chopped onions, chopped red pepper and frozen riced cauliflower to saute pan. Season with salt and pepper.
- Saute for 5-8 minutes until softened.
- Transfer this mix to bowls.
- Top with ground seasoned beef.
- Add sliced grape tomatoes, chopped avocados, olives and a dollop of salsa.
- Enjoy! 🙂
