Spaghetti Squash Shrimp Alfredo

spaghetti squash shrimp alfredo

Ingredients:

1 large Spaghetti Squash

1 bag frozen cooked large deveined shrimp

1/2 jar of Four Cheese Alfredo Sauce (I used the Classico brand)

1/4 cup grated parmesan

1/4 cup shaved parmesan

1/2 tsp Cavender’s Greek Seasoning

salt and pepper to taste

1 tsp olive oil

1 tsp minced garlic

1/2 tsp fresh parsley for garnish

Directions:

  1. Poke holes in your spaghetti squash and microwave on each side for 5 minutes each.
  2. While squash is cooking in the microwave thaw out your shrimp under cool water. Remove the tails once they are thawed.
  3. Add 1 TBS of olive oil to your saute pan with 1 tsp of minced garlic. Let that come to a simmer.
  4. Add in your shrimp and saute just enough to heat through. Season with salt and pepper. After heated through set aside in a bowl.
  5. Carefully cut the spaghetti squash in half lengthwise. (Watch my video to see what happend when I did this) yikes!!!
  6. Scoop out the seeds and discard. Use a fork to scrape out the squash.
  7. Use the same saute pan and add in the squash and season with Cavender’s Greek Seasoning and salt and pepper with a little olive oil. Let that simmer for 3 minutes.
  8. Add in 1/2 of a jar of Alfredo sauce. Let that simmer for 2 minutes and then add the shrimp back in to the pan and heat up for 1-2 minutes until everything is well incorporated.
  9. Plate and top with shaved parmesan and parsley.
  10. Enjoy!
