Since take out pizzas have too many calories for the current diet I’m following, I decided to come up with my own recipe for small personal pizzas. Sometimes the protein will change. For instance if I have leftover chicken breast that’s what I’ll use. Chris found these thin pizza crusts at Food Lion. They have 150 calories each.

Ingredients:

4 Golden Home Ultra Thin Pizza Crusts

2 TBS Rao’s Basil Pesto

4 tsp Boursin Cheese Garlic and Herb

1/4 cup Shaved Parmesan

1/4 Shredded Mozarella

1 cup chopped Grilled Chicken

2.25 oz Sliced Black Olives

1/2 cup Baby Spinach

1/2 Sliced Mushrooms

1/4 cup Mini Pepperonis

1 tsp Italian Seasoning

Top with Bertoli Balsamic Glaze

Directions:

Preheat oven to 400 degrees.

Lay out the pizza crusts on a large cookie sheet.

Spoon out 1/2 TBS of Basil Pesto and 1 tsp of Boursin cheese for each crust and spread those on each crust for your base using the back of your spoon.

Sprinkle a few shaved parmesan pieces on top of your base.

Disperse the remaining ingredients and top off with some shredded mozzarella.

Sprinkle some Italian Seasoning on top.

Be sure not to go too heavy handed on the ingredients since they are small crusts.

Bake for 10 minutes. After they are finished baking and the cheese is melted I like to squeeze a little bit of balsamic glaze on top.
