Fig and Procuitto Pizza

Now that it’s fig season I’ve been trying to use as many figs from our fig trees in our backyard. Last week I made fig jam. This week I’m making a fig and prociutto pizza. There’s something so fun about using different fresh ingredients on your pizza and just being inspired by what you might be growing in the garden or what’s fresh for the season. I’m thinking I may need a brick pizza oven now. Chris said that this type of pizza would likely be served at a charity event for shetland ponies hosted by Liz Taylor and Martha Stewart. I take that as a compliment. lol!

Ingredients:

1 Thin Crust Pizza (I love this brand of thin crust)

1/4 cup Fig Jam (homemade recipe below)

1 cup Arugula

4-5 slices of Prociutto torn in small pieces

6 Figs cut lengthwise

Honey Goat Cheese Crumbles

Carmalized Onions

1 TBS Butter

Balsamic Glaze

Directions:

  1. Preheat oven to 400 degrees.
  2. Slice yellow onion and saute in small pan with 1 TBS of butter until carmelized. About 15 minutes.
  3. Spread on Fig Jam as your base on the pizza crust.
  4. Sprinkle arugula over the jam base.
  5. Tear apart 4-5 pieces of procuitto and place all around pizza.
  6. Sprinkle goat cheese crumbles.
  7. After onions are done carmelizing on the stove sprinkle those on top.
  8. Place figs evenly on the pizza.
  9. Bake for 11 minutes or until crust is golden.
  10. Take out and top with balsamic glaze.

Fig Jam Recipe:

Ingredients:

½ cup water
¾ cup sugar

½ cup fresh lemon juice
16 ounces (1 pound) figs, cut into wedges

Directions:
1. In a medium sauce pan pour in the water and sugar.
2. Heat over medium high heat until sugar is dissolved.
3. Add figs and lemon juice.
4. Bring to a boil.
5. Reduce heat to a simmer and cook for one hour, partially covered.
6. Mash with a potato masher to your desired consistency.
7. Let cool and store in a glass jar in the refrigerator for up to 2 weeks.
