Homemade Chicken Noodle Soup
It was just a soup kind of day. I had some extra ingredients to use up which is always a perfect time to make a soup in my opinion. What is more warming to the soul on a cold Winter day than a nice bowl of Homemade Chicken Noodle Soup?

*Note: To save on time you can certainly use a rotisserie chicken instead of chicken breasts.
Ingredients:
3 Chicken Breasts
2 TBS olive oil or grapeseed oil
2 tsp of minced garlic
1 quart low sodium chicken broth
1 quart water
2 cups uncooked rotini pasta or pasta of choice
2 Wyler’s Chicken bouillon cubes
3 chopped carrots
3 chopped celery stalks
1/2 yellow onion diced
2 tsp Italian seasoning
Directions:
- In a Dutch oven heat up 2 TBS of olive oil and cook chicken breasts.
- Once cooked through take out and set aside. Cut them into small bite sized pieces.
- Pour in 1/4 cup of chicken broth to scrape up any chicken bits from the pot.
- Toss in the vegetables, minced garlic and Italian Seasoning and sauté until tender.
- Now pour in the remaining chicken broth, water, and bouillon cubes. Bring to a boil.
- Once boiling add in the rotini pasta or pasta of your choice.
- Add in the chicken pieces as well.
- Boil for at least 10 mintues until the pasta is tender.
- Serve and enjoy with your favorite bread or crackers.
