Two recipes in one week? Who am I? I think I go through phases of what inspires me and apparently this week it’s comfort food. I blame the cooler weather. I like to keep my recipes interesting so I don’t get in a rut. This throw together Egg Roll in a Bowl is always a fav around here. It also makes a lot of servings so you’ll have plenty of leftovers for the week.

Like I always say…I’m not a food blogger so don’t worry you don’t have to keep scrolling to get to the recipe.

Egg Roll in a Bowl

Ingredients:

  • 1 lb lean ground beef
  • 1 bag broccoli slaw
  • 1/2 onion chopped 
  • 1 green bell pepper chopped 
  • 1/2 cup ginger sesame dressing/marinade (I use Ken’s brand) 
  • 1/2 cup liquid aminos 
  • 1 tsp ground ginger 
  • 1 tsp garlic powder 
  • 1 18 oz frozen Vegetable Fried Rice Pack

Directions:

  1. Brown the ground beef, drain fat and set aside.
  2. Sauté peppers and onions for 5 minutes in the same pan over medium high heat.
  3. Add the broccoli slaw to the mixture. Sauté for an additional five minutes.
  4. Add in the liquid aminos, ginger sesame dressing, ground ginger and garlic powder. Stir to combine. Sauté for 5 more minutes. Reduce to simmer.
  5. While that is simmering microwave the vegetable fried rice pack.
  6. After the rice is done cooking, add the rice to your beef and vegetable mixture. Stir well to combine.
  7. Top with Yum Yum sauce if desired. (Optional) 

You can also substitute the meat for chicken, pork, or any other protein of your choosing. Or you can opt out of the protein altogether. It’s a very versatile meal.
