Bacon & Blue Cheese Coleslaw

This side dish is always a crowd pleaser in our house. Over the years I have modified the original recipe to perfection. We also like to serve it on pulled pork tacos or pork sliders. It’s even good the next day! Secret to a good coleslaw is Duke’s mayonaise. If you can’t get it at your local grocery store due to your area, I highly suggest ordering it online. Trust me…I don’t joke about mayo!

Ingredients:

1 10 oz bag of Angel Hair Coleslaw 

3/4 cup of Duke’s Mayonnaise (Gotta have Duke’s y’all)

1/4 cup Bacon Crumbles 

1/2 cup Blue Cheese Crumbles

1 TBS Organic Honey 

2 TBS Apple Cider Vinegar or Red Wine Vinegar

Salt & Pepper to taste 

Directions:

  1. Cook bacon per package directions. Note: We like to air fry our bacon on 375 degrees for 8 minutes. It get’s it extra crispy which is best for this recipe.
  2. Mix Duke’s Mayo, honey, and apple cider vinegar in a small bowl.
  3. Add this mixture to the angel hair cole slaw.
  4. Crumble the bacon into small bits and mix into the coleslaw along with your blue cheese crumbles.
  5. Mix until well combined.
  6. Season with salt and pepper to taste.
  7. Refrigerate for at least 10-15 minutes.
  8. Enjoy!
