Apple Sausage & Parmesan Gnocchi

After cooking for three weeks straight in quarantine I had to come up with a new recipe to keep things interesting around here. I’m all about meals that take less than 30 minutes, and this is one of them. So I hope you’ll enjoy my Super Easy Apple Sausage & Parmesan Gnocchi with Spinach recipe!

Ingredients:

1 16 oz package of plain gnocchi 

1 12 oz package of apple chicken sausage ( I used the Johnsonville brand)

1 10 oz bag of spinach 

1/4 cup heavy cream

1/4 cup shredded Parmesan cheese

1/4 tsp smoked paprika

1/4 tsp garlic powder

Olive Oil

Salt & pepper to taste

Directions:

  1. Pour a drizzle of olive oil in a large sauté pan. Heat over medium high heat. 
  2. Add in the gnocchi and sauté for about 5 minutes until browned and crispy. Season with paprika and garlic powder. 
  3. Remove the gnocchi to a bowl. 
  4. Cut the apple sausage into small pieces and drizzle some olive oil in your pan. Sauté until the sausage is browned on each side.
  5. After the sausage is cooked through move the sausage to a plate lined with a paper towel to drain off any excess oil. 
  6. Use remaining oil left in the pan to wilt the spinach. Keep stirring the spinach until wilted. 
  7. Move the spinach to a bowl and drain out any excess liquid. 
  8. Return the gnocchi to the pan and add in the heavy cream and shredded Parmesan cheese. Keep stirring until the cheese and sauce thickens. 
  9. Add the sausage and spinach back to the pan. Stir to combine. 
  10. Salt & pepper to taste. 
  11. Enjoy!!
