Greek Chicken Bowl

I hadn’t made this meal in so long. Now that I’m not having weird food aversions Chicken is on the menu again. I hope you enjoy this fresh Greek Chicken Bowl. It’s one of our favorites!

Ingredients:

5-6 chicken breasts

5-6 small red potatoes

1 cup quinoa

8 small vine ripe tomatoes

1/2 English cucumber diced

4 TBS kalamata olives

1/2 green pepper diced

1/4 cup chunky feta cheese

2 slices pita bread

1/2 cup Cedar’s Tzatziki Dip or you can try my homemade version here.

1-2 tsp Cavender’s Greek Seasoning

1 tsp Bertoli Balsamic Glaze

salt and pepper to taste

1-2 TBS Olive oil

Directions:

  1. Prepare quinoa using package instructions.
  2. Heat up olive oil over medium high heat in a large saute pan. Season chicken breasts with Cavender’s Greek Seasoning on each side.
  3. Cook chicken breasts over medium high heat until fully cooked. Flipping halfway to create a golden color.
  4. While Chicken and quinoa are cooking. Preheat oven to low broil.
  5. Cut up all your veggies while chicken and quinoa are cooking.
  6. Microwave the small potatoes for 5 minutes. Then cut them into quarters and place on a baking sheet. Drizzle with olive oil and Cavender’s Greek Seasoning. Broil until golden brown.
  7. Keep the broiler on and broil your tomatoes after your potatoes are finished. I drizzled these with olive oil and a little salt and pepper. Keep an eye on them they only take a few minutes.
  8. Take them out of the oven to cool.
  9. Turn off broiler and add pita bread to the pan and stick them in the warm oven to slightly warm up your pita.
  10. Once the chicken and quinoa are finished cooking, then you can start assembling your bowl.
  11. I like to place the quinoa and potatoes opposite of each other. Then the chicken. Fill in with your veggies. Topping your tomatoes off with a drizzle of balsamic glaze.
  12. Add a dollop of tzatziki sauce to the middle with your toasted pita slices on the side.

This bowl is so full of fresh flavors! My mouth is watering now thinking about it!
