Shrimp & Spinach Four Cheese Gnocchi

Hey friend! Welcome back! I hope you had a great weekend! Today I wanted to share this extremely easy dish that I came up with recently. It takes about 20 minutes, which is my kind of meal! It is semi-homemade which makes it perfect for a Monday night meal! I never like to cook a complicated meal on Mondays, so this is perfect for that. I hope you enjoy!

Shrimp & Spinach Four Cheese Gnocchi

Ingredients

1 10 oz bag Fresh Spinach

1 lb large shrimp peeled and deveined

1 package Four Cheese Gnocchi (I use Sam’s Choice)

1/2 TBS minced garlic 

1/4 cup shredded Parmesan cheese

1 TBS unsalted butter 

1-2 tsp Italian Seasoning 

1/2 tsp garlic salt 

1 TBS olive oil 

Salt and pepper to taste 

Directions

  1. Cook Gnocchi according to package directions. 
  2. Peel & devein the shrimp and set aside 
  3. In a sauté pan drizzle 1 TBS olive oil and 1/2 TBS of minced garlic…sauté for 1 minute over medium high heat. 
  4. Take the whole bag of fresh spinach and place it into your sauté pan with the garlic and oil. Wilt the spinach for 1-2 minutes. Stirring frequently. Season lightly with salt and pepper.
  5. Once the spinach is wilted place it into a bowl and set aside. 
  6. Wipe out your sauté pan with a paper towel. 
  7. Sauté 1 TBS of butter in your pan over medium high heat. Next place your peeled and deveined shrimp into the pan. 
  8. Season the shrimp with Italian seasoning and garlic salt. 
  9. Heat over medium high heat until shrimp are pink and no longer translucent. 
  10. Take wilted spinach and add it back to the pan with the shrimp for 1 minute to warm up. 
  11. Dish out your cooked gnocchi onto the plate and top with shrimp and spinach mixture. Sprinkle with shredded Parmesan cheese.
