  Banana Bread Recipe

Hey y’all! I thought I would do a something a little different today and share my favorite banana bread recipe.  I’ve been modifying this recipe over the years and I finally have it down pat. I always know when my husband is craving some banana bread when he leaves me two bananas at the end of the week. It’s like his cute little suggestion. Even though this recipe is Gluten Free it’s by no means healthy. Just throwing that out there. 🙂 You can’t even tell that it is gluten free it’s that good. Let’s get to it shall we?

Ingredients:

  • 2 very ripe bananas (the riper the better)
  • 1 1/2 cups Pamela’s Gluten Free Baking Mix or Regular Self Rising Flour
  • pinch of salt
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 egg, whisked
  • 1/3 cup unsalted melted butter
  • 1/2 cup sugar
  • 1/2 cup semi-sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees
  2. Grease bread loaf pan with cooking spray or butter
  3. Sift Pamela’s GF baking mix, baking soda and salt together in a separate bowl
  4. Mix 2 bananas, melted butter, vanilla and sugar into a mixer until smooth
  5. Add in egg that has been whisked with a fork
  6. Slowly add the flour mixture into the mixer
  7. Mix until smooth. Don’t over mix.
  8. Add in chocolate chips at the end just until they are all incorporated
  9. Pour mixture into greased pan
  10. Bake 50 minutes until browned
  11. Let cool for 10 minutes before devouring
  12. Enjoy!
